Salmon Teriyaki Rice

I love Asian cuisine and salmon so this delicious dish is a winner for me! I don't usually venture into cooking Asian recipes but I loved how easy this recipe is so gave it a go and it turned out great. I even made my own homemade teriyaki sauce! The sauce is sweet, fragrant and savory and goes so well with the fish and rice. Teriyaki is a Japanese cooking technique. The word Teriyaki derived from “teri”, which means shiny and “yaki” which means grilled or broiled. As the sauce reduces and thickens during the cooking process, the ingredients surface becomes shiny and glossy. This recipe is super easy, healthy, one-pan meal with hearty vegetables and you can add some interesting toppings to make it even more delicious.

Ingredients

300g Salmon, cubed

1 cup teriyaki sauce - homemade recipe see below

2 teaspoons coconut oil

1 medium brown onion, diced

3 cloves garlic, minced

3 medium carrots, diced

250g broccolini, cut into pieces

3 cups brown rice, cooked

2 tablespoons soy sauce

1 tablespoon sesame oil

pepper, to taste

Sesame seeds, to garnish

Other toppings you can add: edamame, slice radish, avocado, green onions and grated ginger.

Preparation

Marinate the salmon in the teriyaki sauce in the refrigerator for at least an hour.

In a wok or deep skillet, add the salmon in the teriyaki marinade and cook thoroughly over high heat. Set aside.

In the same pan, add the coconut oil and cook onions, garlic, and carrots until onions are translucent.

Add broccolini and cook an additional 3-4 minutes. Add rice, cooked salmon, soy sauce, sesame oil, and pepper. Mix well and let the rice cook until slightly crispy. Sprinkle with the sesame seeds and serve.

Homemade Teriyaki Sauce

This sauce is bold and thick and is great as a marinade or as a sauce served with your favorite meats.

Ingredients

  • 1 cup water

  • 4 tablespoons packed coconut sugar or brown sugar

  • 1/4 cup soy sauce

  • 1–2 tablespoons pure honey

  • 1 large clove of garlic, finely minced

  • 1/2 teaspoon ground ginger

  • 2 tablespoons tapioca starch or cornstarch

  • 1/4 cup cold water

Preparation

  1. Combine the 1 cup water, coconut sugar, soy sauce, honey, garlic and ginger in a medium saucepan and set over medium heat.

  2. In a small bowl, combine the starch with the 1/4 cup water and whisk until dissolved. Add the cornstarch mixture to the saucepan.

  3. Heat the sauce until it thickens to your desired thickness. If the sauce becomes too thick, add more water to thin it out.
